Our Story
Melissa and Steven Gore and their kids, wanted to create a unique place for dining in Northern New Mexico - a place that makes you feel as comfortable as you would be at your own home (but without the cooking and cleanup). In a grand adobe building with latilla ceiling, they created the Depot, across the tracks from the old Springer train station. The building is chock full of Springer History, comfy booths and delicious food and drinks.
Coffee lovers, for sure, the Gore's set about creating a coffee bar with extraordinary espresso and coffee drinks. They formed partnerships with like minded producers - like Sol Ranch, in Wagon Mound, NM where animals are raised on native grasses to produce the highest quality beef, in a humane and sustainable setting. They found Desert Sun Coffee out of Durango Colorado who purchases directly from the farmers who produce their coffee, and roasts their beans every week. When you drink a cup of coffee or espresso at the Depot, it's as fresh as it gets.
You can also enjoy locally brewed beers on tap from Blu Dragonfly brewing in Raton, and bottles and cans of New Mexico's finest brews, along with a few favorite domestics. The Gores also make mindful decisions about everything from the music you hear in the Depot (a carefully chosen mix of 40s, 50s, and 60s usually that gives you a hip retro diner feel) to the packaging they use in dine in and take out food presentation. You'll find compostable straws (but not the wimpy paper ones!) and biodegradable to-go containers, as well as paper bags to pack it up in.
You also find a friendly, family run atmosphere. The owners and their kids are your servers, cooks and hosts, and they want you to feel well-hosted when you leave. So whether you are stopping in for a quick meal on an epic road trip, or just unwinding after a long week (or a very long Monday), the Depot will welcome you with open arms and craveable foods! "We've got a table for you in the dining car at the Depot!"
